Lemon Bread - A must try!!

I discovered this recipe in a Cookbook I received for a wedding gift nearly 10 years ago. It is from Kay Carr...I watched her husband, Howard, while she went to her quilting group each week. Howard suffered from Alzheimer's. This is delicious!! A huge hit with my entire family!

1 c sugar
1/2 c shortening
2 eggs, beaten
1/2 c milk
1 1/2 c flour
2 tsp baking powder
1/2 tsp salt
grated lemon zest

Cream shortening and sugar. Add beaten eggs. Mix dry ingredients alternately with milk. Bake in well greased loaf pan for 1 hour at 350. Makes 2 small loaves.

*I decided to try it in one large loaf pan, but the bread fell in the middle. It could be because I did not use the 2 small loaf pans, or it could be our elevation difference. Either way, still YUM!
