Day #4 - Lemon Curd

My Sis (in law) has mentioned to me that she enjoys Lemon Curd with scones.
I have never had lemon curd.  I found a recipe for it in a cook book at the Library (I LOVE our library, but that's another post...!)  So, last night I went ahead and made the Lemon Curd and put it in the fridge for the night.  Woke up this morning and made fresh scones.  Scones spread with fresh lemon curd was a HIT with the entire family!  They all raved about the lemon curd!!
